Sorry if anyone tried the link to my summer corn and bacon pasta and got directed to my mandarin avocado salsa instead-- also delicious, but not what you were expecting. Oops! I fixed the link.

And if you DO want to try some mandarin avocado salsa, click here: https://docs.google.com/document/d/1pJI0_4RTj5kGIiQihQ7OVnZnmLKejoE0/export?format=pdf

Love this post! And the recipe sounds delicious - even if I use vegetarian bacon. Glad you had a a good break 🙂

I can't strictly guarantee that the results will be the best thing you've eaten all week if you're using vegetarian bacon-- I've got no experience with it. Anything with a smoky, umami taste would probably work, though.

Thanks-- glad to be back.

Is it just me or is it harder to focus on writing in the summer?

So many summer distractions... plus the weather-induced languor. Sigh.

I love the mandarin salsa. It's more of a winter thing around here, because citrus season begins in fall, but I think other fruit-- summer stone fruit, or mango-- would be nice in it too! You'd want to adjust the lime juice and honey depending on how tangy your fruit is. And fresh corn rather than frozen would be awesome in that one too! It's hefty enough with the beans to be the basis of a light summer supper, on a tortilla or in a salad. Hope you like it!
