I can't strictly guarantee that the results will be the best thing you've eaten all week if you're using vegetarian bacon-- I've got no experience with it. Anything with a smoky, umami taste would probably work, though.
I love the mandarin salsa. It's more of a winter thing around here, because citrus season begins in fall, but I think other fruit-- summer stone fruit, or mango-- would be nice in it too! You'd want to adjust the lime juice and honey depending on how tangy your fruit is. And fresh corn rather than frozen would be awesome in that one too! It's hefty enough with the beans to be the basis of a light summer supper, on a tortilla or in a salad. Hope you like it!
